The strip of land where potatoes were grown
and harvested earlier is now a bed for sweet potato and red amaranth.
While the weather is still good, it is
better to cover the ground with some vegetation than let it lie bare. The
simplest is to cut some shoots from other established sweet potatoes and plant
them horizontal to the ground, and sow a handful of red amaranth seed around.
There may not be enough sunny time for
sweet potato tubers to form, but at least I could harvest shoots for stir-fry.
Red amaranth grows fast, should treat it like herb, keep cutting off tender top
above a leave and it will keep growing back, very productive.
