Steam eggplant with semi dry tomato sauce

A popular Turkish dish is to cook eggplant for a long time in tomato sauce. I simplify by steaming eggplant, for keeping its flavor, and use semi-dry tomatoes to make a tasty sauce.

1. Cut semi-dry tomatoes into cubes, season with salt and black pepper, add olive oil and a big handful of fresh basil, mix well and rest for half an hour.

2. Cut eggplants into cubes, steam until cooked, around 20 minutes.
3. While eggplant is still hot, stir in tomato sauce.
