After cutting up another half lamb for the
rest of the year, the rib bones are slow cooked to tenderize, the meat is soft and pull easily off the bone.

1. Season ribs with salt, white pepper,
cumin seed and olive oil for a day.
2. Preheat oven at 220˚C, cook ribs for 5
minutes, then turn temperature down to 100˚C, cook for 2 hours.
