Lobster tapas



Prepared a seafood dinner for friends from Italy, using the best seafood we could find in Rovinj, Croatia. This includes:

Khol rabi and red bell pepper pickle
Lobster & langoustine bisque noodle
Stir-fried squid with ginger and spring onion
Salad with carrot and orange
Baked sea bream

1. Place lobster in boiling water, remove from heat and poach for 20 minutes (for a 700gm lobster).

2. When cold, remove shell, cut tail and claws into neat pieces.
3. Chop trimmings coarsely, mix with salted butter. 
4. Spread lobster butter on soft bread, add a piece of lobster on top.
