Vegan no gluten dinner

from my garden


Entertained some friends who are either vegetarian, vegan or sensitive to gluten, or all of them, meaning no meat, no dairy, no egg, no wheat flour.... quite an interesting challenge to see what I can prepare from my garden.

semi dried cherry tomato on dried onion

Semi-dried cherry tomato on dried onion - a good start to dinner, intense sweet sour tomato on sweet spicy onion.

Starter

Romaine lettuce and cherry tomato salad

Romaine lettuce in a sauce made with sesame paste, mustard, lemon juice and salt. With a sprinkle of roasted pine nut on top for crunch, and cherry tomatoes Cocktail Clementine around for colour.

Main

baked bean with semi dried tomato sauce

1. Baked runner bean with semi dried tomato in olive oil and salt dressing.


amaranth with savory potato nut crumble

2. Cooked red amaranth, topped with savory potato nut crumble (non-gluten) - bind roughly chopped mix nuts with cooked potato, season with salt, coriander powder and butter. Place on top of amaranth in lumps, bake at 200˚C until lightly golden, around 12 minutes.
