Fig and tomato sauce

This is a fabulous fig year, not just a lot of fruits, but they mature gradually over 3 weeks now. Gives me a breathing space in using and transforming them.
Made this sauce to go with baked mackerel. 

Fig and tomato sauce

1. Cut cherry tomatoes into halves, figs into quarters, season with salt, curry powder, coriander powder, pepper and olive oil.
2. Bake at 170˚C for 10 to 15 minutes to soften, add herbs for colour, give it a gentle stir, pour on top of mackerel.
