With a bit of lamb and cooked rice in the
fridge, though of making fried rice, using dried shrimp and green bean to bulk
up volume, and flavor.
1. Cut lamb into small pieces, season with
salt and cumin.
2. Cut green bean into small pieces.
3. In a pan, sear lamb in some oil, when
nearly ready, add dry shrimp, stir-fry until fragrant, remove from pan.
4. Add green beans and a cup of
water, season with salt, cook until soft.
5. Add a bit of oil in the pan with bean
and add rice to loosen and mix together, then add cooked lamb and shrimp.
6. Mix in whisked egg to finish, and a
handful of fresh parsley before serving.
