Giant Kailan pickle




Usually organic leafy green vegetables in Hong Kong are young plants, probably to reduce risk of pests attack or harvest fast to generate income. They are tender but do not have a lot of flavor.

This year I joined a group to order from Soil organic farm in Fan Ling, to my surprise this week there are these giant size Kailan, two pieces weight more than a catty (600gm)!

I decided to eat the stalk raw, to enjoy the sweet flavor and crunchy texture.

1. Peel tough outer skin, cut into mouth size pieces.

2. Season with salt, around 1% its weight, and a couple of chili, for an hour.

3. Remove liquid and season with sesame oil or olive oil.
