Pak choi stalk pickle

Bought some organic pak choi that has fleshy long white stalk, not the small ones I used to buy. Found the white stalk beautiful and juicy, decided to make a pickle to eat it raw.

1. Use only the white stalk, cut lengthwise into strips, add strips of carrot for colour, mix with 1% its weight of salt, rest for at least an hour to soften and for juice to come out.
2. Before serving, remove juice, season with a dressing of olive oil, soy and any nut butter.
