Went to the market and
bought a few seasonal wild sea fish to enjoy with friends, silver snapper, small barracuda and Ma yau
fish. The fish is cooked on barbecue while bones and head are used in making fish soup.

1. Simmer gently bones
and fish head with ginger, old mandarin peel, chili and half a cup of rice wine
for an hour. The soup will have only fish oil released from the bone, I like it
this way than searing the bones first.

2. Season with salt
and white pepper, add cubes of soft tofu and coriander before serving.

Needless to say the
taste and texture of Ma yau fish is miles ahead of the other two.
