Sourdough glutinous rice flour muffin




Having the sourdough starter is like having a new "toy" in the kitchen to play with. I fed it with glutinous rice flour to develop this super white sourdough starter.

I added almond flour to reduce the stickiness of glutinous rice flour, so that bubbles formed by the starter can hold their shape after baking. When eaten fresh from the oven, the outside is like short crust and inside is semi-chewy, my favorite texture combination, and a mild sour taste unique of sourdough preparation.

1. Feed 1/2 cup of sourdough starter with 1part glutinous rice flour and 1.2 part water (in weight), leave at room temperature for a day until bubbly.

2. Mix together:

            100gm glutinous rice flour sourdough starter

            50gm almond flour

            20gm sugar

            10gm melted coconut oil

3. Fill lined muffin tins 2/3 full with the mixture, rest until risen 1/3 more.

4. Bake at 170˚C for 30 minutes.
