Slow cooked rolled lamb shoulder in curry sauce


A relaxing dish to make for dinner party, that can safely stay in the oven until guests are ready to eat, and very tasty too.
1. Mix thyme, cut up raisin or any dry fruit, with oil and a big pinch of salt, spread on the inside of lamb shoulder, roll up and tied well.

2. Make a light curry sauce with sweated onion, garlic, carrot cut into cubes, curry powder and coconut milk, season with salt and brown sugar.

3. Place lamb into curry sauce to warm up, then place in baking dish, pour sauce until half way up.
4. Bake at 110˚C for 3 hours, turn over every hour.
