Squid stuffed with mince pork
Saw a photo of this dish on internet prepared in a restaurant in Thailand. It looks good and instantly reminded me of wonton with prawn and pork stuffing, a tasty combination of oily meat and umami seafood flavor. Unfortunately the seafood vendor is so kind to clean the squids for me without asking and when I got home, it was a horror to find the squid being cut open! As the fatty mince pork is already prepared, I proceed using toothpicks to seal the ends.
It is tasty, the flavor and the different textures of squid and pork are good, but the tastiest is actually the broth at the bottom of the dish! So fragrant, can taste both the meat and seafood characters and how they compliment each other.

1. Prepare fatty mince pork, season with salt and white pepper.
2. Clean squid, only half fill with mince pork, as squid shrinks during cooking.
3. Place stuffed squids on some veg, add a table spoon of rice wine, steam until cooked, depending on size, around 8 minutes.
