The market Brexa at San Sebastian is really wonderful, not just there are a lot of fish, the meat counters are also fascinating. Like there are counters selling half of milk fed lamb, around 2.5kg, great size for spit roasting on the barbecue. 

Spit roast milk fed lamb

1. Season lamb at least a day before, with mixture of thyme, salt, white pepper and olive oil, massage all over and rest in the fridge.
2. Spit roast on barbecue on gentle flame for an hour and a half, or bake in the oven at 130˚C for an hour.
