Cod in cheesy potato


Filet of cod is a good fish to present, pure white, flakes well and no bones, safe to serve to westerners. Its flesh is on the dry side and need sauce to go with it. This baked cod with potato in creamy cheese sauce is very easy to prepare and great for serving.

1. Season cod fillets with salt and white pepper for an hour.

2. Dilute cream with equal amount of water, season with salt and nutmeg, boil with slices of potato until soft.

3. Pour a layer of potato and sauce in a baking dish, sprinkle grated Gruyere, place filets of cod on top, then the remaining potato, sauce and cheese.

4. Bake at 180˚C until fish cooked and cheese golden, around 15 minutes, sprinkle fresh coriander leaves before serving.
