Calamansi |
This citrus is the best performing plant in
my Orangerie, having a small harvest every year.
The juice is very sour, normally being used
to make a refreshing drink in Asia. I turn it into marmalade, using honey as
sweetener. The marmalade is surprisingly fragrant and tangy.

1. Cut calamansi into small pieces, remove
seed.
2. Mix with honey and bring to boil, cool
down.
3. Repeat boiling and the marmalade is
ready.
