Mix vegetables rosti duck bresast |
This is a lighter version of rosti, more
colourful and healthier, goes well with lightly baked duck breast.
1. Shred potato, carrot and turnip, season
with salt and pepper, rest for 15 minutes.

2. Squeeze out excess juice (to use in
soup), mix with oil, form flat rosti on baking paper, bake at 180˚C until
golden, around 20 minutes.
