Found an organic farm on the northwest
that raise traditional Dexter cows, that I can order on line and delivered. Just tasted strip loin steak, good
marbling, dry aged for 21 days.

Simply season with salt and rest at room
temperature for an hour, sear each side at high heat for 2 minutes, rest in the
hot pan for another few minutes for a pink result. The meat has a rich flavor
and is so tender, without feeling oily like Wagyu beef.
