Cold noodle with fresh pickled vegetables
Good summer dish, easy to make and refreshing taste.
1. Cut cucumber, carrot, turnip into strips or thin slices (using peeler), add a handful of fennel fond, season with salt, sugar, white pepper and juice of 2 lemons, mix well and rest for an hour.
2. Add cooked noodle into vegetable mixture, great with smoked mackerel .
