Herring is a beautiful fish, in the oily fish family, between the size of sardine and mackerel. It has a lot more fine and soft bones but the flesh is more delicate. I prefer to season with salt and dry in the fridge for a day before searing, in its own oil, skin goes crispy without splitting and meat is more tender.
