Apple date goji crumble |
I am still using up green cooking apple harvested a month ago, on the last box now.
This is a healthy crumble, using dates and goji berries to sweeten, crumble made of oat and mix seeds.
1. Mince date and cover with boiling water to soften.
2. Peel and cut apples into 1cm cubes, season with a big pinch of salt, a lot of cinnamon powder and some ginger powder, mix in softened date paste, pour into baking dish.
3. Using cocomus (creamed whole coconut), dilute with same quantity hot water, and 1/2 quantity coconut oil. Add oat flakes, flax, sesame and chia seeds, season with salt.
4. Spoon oat crumble mixture on apple, bake at 170˚C until crumble golden and apple soft, around 1 hour.
