For me hake need be served with a sauce, not the
type of fish that can be plain baked to enjoy the flavor and texture, a bit too
dry. This combination of cardamom and soy sauce has great fragrance and is delicious.
1. Pound the seeds of cardamom, mix with soy sauce, brown sugar, white pepper and olive oil, season fish for half a day, or longer.
2. Wrap fish in baking paper, bake at 200˚C until cooked, around 20 minutes for this 1 inch thick slice.
