Winter coming and is time to have more soup, went to organic farm and bought back, on top of good cuts of meat, pork knuckles and ribs, chicken feet and necks to make thick nutritious stock, full of collagen and minerals.
Seasoned generously with star anis, ginger, Chinese liqurice, old mandarin peel and garlic, simmered 3 times over 3 days, picked out bones and stored in portions in the freezer.
