Daikon bone soup


 

With a good harvest of Daikon, and it keeps well in the fridge, I am making quick soup for dinner. Old saying is ginger in the morning and white turnip at night, and since having Daikon soup for dinner for a few nights, noticed that my quality of sleep improved, no more waking up in the middle of the night. Hope this continues.... just sowed Daikon seeds and see if they can grow in the greenhouse for a continuous supply!  

 

1. Cut Daikon into thin slices, cover with water and simmer until translucent, around 20 minutes, season with salt and pepper.

2. To vary, add bone soup as stock; season with miso; add tomato etc
