Raspberry Clafoutis


 

Very good harvest of raspberry, every other day a 2 kg bowl, ate a lot and made many jars of jam. So have to think of other ways to eat them, now making clafoutis and raspberry vinegar.  Clacoutis is easy to make, light texture and low on carbohydrate.

 

1. Butter baking dish, line the bottom with raspberries.

2. Mix together :

 

3 eggs

60gm almond flour

30gm flour

60gm sugar

250gm cream

 

3. Pour on top of raspberries, bake at 190˚C until golden, around 25 minutes.
