Ma Yau
Having regularly slices of Ma Yau from the freezer, already salted, never fail to please.
This time sweat a lot of ginger strips, lemon grass, chilli, then sear slices of carrot, when brown, add Ma Yau, sear both sides golden, add kaffir lime leaves in thin strips and rice wine, cover with lid, remove from heat and rest for 5 minutes, perfect fragrant moist flesh.
