Elderflower cordial




Normally made with single syrup, which I find using too much sugar. This year saw this recipe of an easy way to make it, which is easy to keep and not using much sugar. 

Harvest some heads of elderflowers, place flowers in a jar, cover with vodka or other neutral alcohol. Rest on the windowsill with warm sunshine for a couple days. 


Filter out liquid, add 1/3 quantity of lemon juice and some honey/sugar to lightly sweeten. The alcohol content is reduced from 40% to around 20%, which is high enough to make it safe to keep. To enjoy, pour one part and dilute with 10 parts of cold water/warm water/sparkling water.
