Raw blackcurrant cordial





A good year for berries, other than having good yield of raspberry, gooseberry, blackcurrant bushes also bear a lot of fruits.
From 3 bushes I collected 3.2 kg of fruits.
Most of them I cooked as jam, not adding water, just enough sugar to sweeten, then blend until smooth.

Some I experiment to ferment in honey, simply mix berries with honey, let honey extract flavour and use as cordial, in water, white wine or champagne.
