Invited friends over for dinner, simple bbq meat with stir-fry veg and in order to use up fresh coriander in the fridge, made this spicy persimmon coriander raita to go with the grilled meat. Amazing flavour combination, gives a sparkle to the meal.
1.Remove skin and cut persimmon into cubes (can use any other sweet tasting fruit like mango/peach etc).
2.Mix in coriander, season with lemon juice, salt,1cm of finely chopped bird eye chilli (v v spicy), yogurt.
