I like the little fish market in Sai Kung, never very busy, the stall owners always have time to talk to you, to recommend their fresh items. Saw this pretty fish on offer, slightly over 1kg, and just give it a try.
Steam for 10 minutes with a lot of finally cut spring onion, ginger, and a big piece of butter. The sauce generated is nice to dip the fish flesh in before serving.
