Mala Razor clam





Learn to use razor clam to make a cold Mala  dish at restaurant Harbour One, Hong Kong, very tender and tasty.

First push a sharp knife into razor clam to cut into halves lengthwise, clean away sand. In boiling ginger white pepper water, blanch razor clam a few at a time, for just 3 seconds, the meat will come loose from the shell.

Season razor clam with Sichuan pepper oil and chilli, a little soy sauce and rice wine, sprinkle fresh herb like dill before serving.
