Nutty eggplant tomato bake


The use of nut paste (hazelnut /almond/peanut etc), instead of cheese in this dish, enriches it and makes it more fragrant.

1. Cut eggplant into 2mm slices, layer the bottom of a baking dish, spread a big spoonful of  tomato sauce on top, then drizzle nut paste on top, sprinkle salt & pepper to season, place basil leaves on top. Repeat 2 layers or more.

2. Bake at 180˚C for 30 minutes.
