Chocolate and walnut soya cake


I use the soya milk machine to make black bean soya milk, and use the slightly grey soya residue to make this chocolate cake, a bit like a brownie but without using butter.
1. Mix into a portion of cold soya residue 50 gm flour, 30gm cocoa powder, 1 sachet of baking powder, 80gm brown sugar, 3 eggs and a handful of walnuts, to form a very wet dough.
2. Pour mixture into a well greased and floured baking dish, bake at 160˚C until the surface is dry and firm when touched, around 30 minutes.
3. Cut into slices and serve with yogurt or sour cream.
