Strawberry ginger jam


I used organic strawberry and old ginger to make this jam. Choose small strawberries if possible, small ones have more flavor than big ones. The ginger flavor gives this jam a twist, and the strawberry flavored ginger is nice to eat too.
1. Depending on size, cut strawberries into 4 to 8 pieces.

2. Marinate strawberry with around 1/5 by weight of brown sugar. Cut old ginger into thin slices.

3. After an hour, bring the mixture to boil, let it cool down without a lid, use a mesh to stop anything falling in.

4. When completely cooled down, repeat this process a few times, 5 times in this case, for excess liquid to evaporate and the jam becomes thick enough, adjust final sweetness.
