Super chocolate cake


I got this recipe from a famous hotel cake shop, but made a mistake in adding double quantity of Grand Marnier in it, the result is super good.


Super chocolate cake

4 egg yolks
40gm sugar
160 gm soft butter
200gm melted dark chocolate (70% cocoa min)

4 egg whites
80gm sugar
40gm white flour

120gm Grand Marnier

1. Whisk egg yolks with sugar until pale, add soft butter and whisk until pale and double in volume, fold in melted chocolate.
2. Whisk egg whites with sugar until soft peak stage, fold carefully into chocolate mixture, fold in sieved flour.
3. Gradually stir in Grand Marnier, pour into buttered and floured spring form cake tin to around 2cm high. Bake at 160˚C until double in height and dry to touch, around 25 minutes.
4. Serve when cooled down, the cake will collapse back to its original height.
