In spring, shad is fat with eggs,
luckily this fish is not popular locally because it is full of bones, so there is no need to control
fishing.
I preserved the eggs with 3% its weight of
salt & brown sugar, some Sichuan pepper and chili pepper, so that it keeps better
over longer time. A lot of liquid comes out overnight.
