A few ways to enjoy Alose/Shad eggs

In spring, shad is fat with eggs, luckily this fish is not popular  locally because it is full of bones, so there is no need to control fishing.

I preserved the eggs with 3% its weight of salt & brown sugar, some Sichuan pepper and chili pepper, so that it keeps better over longer time. A lot of liquid comes out overnight.

                            Raw mix with coleslaw

                            Raw on top of hot rice

 Pan fried on both sides, then cut open to cook the middle.

                           Double eggs omelette
