Simple stir-fry dish that uses fresh produce
from the garden.
1. Cut beef into cubes, season with salt,
soy sauce, black pepper, olive oil and corn starch.
2. Cut red onion, zucchini, green bell
pepper and carrot into cubes.
3. Sweat red onion in olive oil, when soft,
add beef, turn and sear all sides until cooked, remove from pan.
4. In the same pan, add zucchini and carrot,
a little water, salt, coriander powder and pepper, stir-fry until just soft,
around 3 minutes. Mix in beef and feathery fresh fennel tops.
