Pear and mandarin compote


Great to eat on its own or with thin shavings of tangy sheep cheese.



1. Peel and cut ripe pears into chunks, cook in half an inch of water, with a pinch of salt, a few slices of ginger and a big spoonful of mandarin jam (or marmalade, any jam with a sour taste). Simmer for a couple of minutes and cool down in the pan.

2. Can serve as such or with yogurt, or with thin shavings of tangy cheese  (use vegetable peeler to make the shavings).
