Many meals out of a cow tongue


Got a whole tongue from the organic beef farmer, it is more "complete" than what is normally available in the market.

the tip is stewed in soy sauce & star anise sauce
I like to dissect it into different pieces, the end of the tongue is my favorite part for quick searing, the front for stewing, the meat on top for soups.

I prefer to trim away the white thick skin on the tongue instead of blanching and peeling it off, just so that I could cook different parts the ways I like.
