Guinea fowl liver in cream soup


Previously poached livers are reheated to serve in a cream soup.

1. Slice poached liver thinly and place at the bottom of soup bowl.

2. Sear potato cubes then add water and bring to boil with goji berries, season with salt and white pepper.

3. Add coriander leaves and sour cream, pour on top of liver.
