A small duck because it is semi wild,
meaning raised in a farm but free to roam and forage for food, less fat,
stronger taste than duck fatten up with grains. The fat from roasting dripped
down to a tray of steamed eggplant and potato.

1. Holding the head, pour boiling water on
the skin of duck. Rub mixture of salt, white pepper and 5 spices inside and
out.
2. Make a thick mixture of vinegar and
honey, brush on skin, dry in the fridge for a day, brush on the mixture regularly.
3. Spit roast for about 45 minutes.
