This is a good, fast way to use the oil
oozing out from cooking sausages on hot plate outdoor, and end up with a
vegetable dish to serve with.
1. Cut eggplant into slices, season with
salt and steam until cooked.
2. Cut tomatoes into halves, season cut
sides with salt and pepper, I use figs too as there are a lot at the moment.
3. Cut green pepper into strips and wash a
big handful of basil leaves.

4. Cook sausages on the plancha, place
tomatoes and figs cut side down around sausages. When cooked, put aside to keep
warm.

5. Use green pepper, basil leaves and
cooked eggplants to mop up the remaining oil and juice on the plancha, mix with
tomatoes and figs.
