Too many wild blackberries,
no space left in the freezer, have to use other methods to preserve them.
To make blackberry
vinegar, start with blackberry coulis, add equal volume of cider vinegar, and
brown sugar to taste like balsamic vinegar, bring to boil.
For blackberry digestive,
use rum /voka/gin/rice wine (around 40˚ alcohol) as you like, add equal weight
of berries, sweeten with brown sugar if you like the digestive to be sweet, add
cinnamon stick, all spice berries or cloves if you like it spiced. Keep for 6
weeks before serving
