Wood ear fungus soup and cold dish




 
I eat wood ear fungus regularly, not so much for taste, but for various health benefits. This is how I like to prepare it at the moment.

1. Soak fungus for half a day, change water at least once.

2. Cover with water, add red date, licorice, goji and a pinch of salt, bring to boil, let it cool down, repeat once more.

Take out the fungus, season with soy sauce, balsamic vinegar, garlic infused in olive oil and salt. I find it easier to digest wood ear fungus with vinegar.



Soup

The remaining liquid with date and goji is sweet and could be drunk as such, or boil again with ginger and sweet potato as dessert.
