Mantis shrimp

Bought fresh mantis shrimp in the market, a rare delicacy here. I like the sweetness of the flesh but find the texture a bit on the soft side.

Decided to gently shallow fry them in half butter half olive oil until slightly golden, to boil away the liquid and firm up the flesh.
