Chewy apple cupcake

Winter in Hong Kong is the time to play with glutinous rice flour in baking. I like the totally different result, the unique chewy texture by substituting normal wheat flour with glutinous rice flour. This cupcake has a crumbly outside and chewy sour apple flavored middle.
