Winter in Hong Kong is the time to play
with glutinous rice flour in baking. I like the totally different result, the
unique chewy texture by substituting normal wheat flour with glutinous rice
flour. This cupcake has a crumbly outside and chewy sour apple flavored middle.

Glutinous rice flour 300gm
Baking powder 5gm/1 teaspoon
Grated cooking apple 450gm (in juice of one
lemon)
Butter 150gm
Egg 2
Sugar 80gm
Pinch of salt
1. Mix flour with baking powder, sugar and
salt.
2. Melt butter, mix with grated apple and 2
beaten eggs.
3. Add flour into butter mixture, stir
well, add cold water if stiff, should aim at a thick paste consistency.
4. Spoon into paper lined cup cake tin,
bake at 180˚C until golden, around 45 minutes.
