Garlic 3 ways

The result of unusually hot Spring is that everything grows faster than normal, including garlic. A test dig yesterday to check condition of bulb turned into a full harvest.

Within the same field, there are bulbs in all sizes, from super small to large, all split into cloves, some already opened up and some even rotten!

For the small and opened bulbs, I confit them, slow cook at low temperature, in olive oil, salt and bay leaves, in slow cooker at low setting, until soft, around 2 hours depending on size.

The big ones will be turned into black garlic using the special machine, the medium size in daily cooking.
