With tomatoes turning red gradually, more
than I can eat fresh, but not enough to start making sauce, the best is to dry
them to extend usage time and concentrate flavor.
The sharp taste of dry tomatoes go well
with pork.

1. Blanch and peel tomato skin, cut in
halves and dry, semi dry or totally dry for longer storage time.

2. Season pork slices with salt and pepper,
mince garlic and cook until golden, add pork slices and sear light golden.

3. Add semi dry tomatoes, or totally dry
ones with a chopped up fresh tomato for some juice, stir-fry to mix well and add a
handful of basil before serving.
