A friend gave me super fragrant cumin
powder after a holiday in Marrakesh, Morocco. I have to use it more to enjoy
the fresh aroma, on experimenting, found that cumin goes very well with tomato. A
refreshing and energizing soup for summer.
1. Cut cucumber into pieces, mesh 2
garlic cloves, season with salt, pepper and a tbsp yogurt. Mix well and let it stands
for a few hours, keep the juice that comes out.
2. Blanch and peel the skin of ripe
tomatoes, cut into big cubes. Add to cucumber mixture, season with olive oil,
more salt, a handful of basil leaves and a tsp of cumin.
