Tomato scramble egg

Semi-dry tomato scramble egg

This is a very common dish in the old days, a taste hard to reproduce in recent years, may be my taste buds are less sharp. The problem is there is too much liquid coming out from tomato, dilutes the flavor and make the dish watery.
So the solution is to semi-dry the tomatoes first, to enjoy the intense taste of tomato and aroma of egg.

1. Blanch and peel tomatoes, cut in halves, sprinkle a little salt on the cut surface. Place on dryer until semi dry, around 6 hours.

2.  Warm semi-dry tomatoes, cut into pieces, in butter, then pour in whisked eggs, seasoned with salt.
